Why do artists struggle so much with the business side when they're good at creating and even good at selling in person?

Artists are essentially trying to run a restaurant as a one-person operation. You’re not just the chef creating the dishes—you’re also the receptionist, maître d’, waiter, sommelier, bartender, busboy, and dishwasher. If you’re doing all those jobs, your restaurant can never serve more than a couple customers per night because it’s too much work. The same applies to an art business. Something has to give if your business is going to grow. You need to focus on what only you can do: creating the art and doing the personalized marketing. Everything else should be systematized, automated, or outsourced so you can maintain consistency without burning out.
