How do I create emotional connection with my wildlife or landscape photography when buyers weren't there to experience it?

You need to tell the story behind the image. Buyers didn’t feel the wind, weren’t standing on the beach with sand in their toes, didn’t understand that the storm was so strong you took a thousand photos to get one published. Sell that emotion in your online content and descriptions before they come in or make a purchase. Consider recording voice notes while you’re shooting — capture what you’re experiencing, how cold it is, the difficulties you faced — then transcribe and use that to create compelling stories around each image.
