What's the right way to price and sell limited edition prints that I sign myself?

For limited editions, the value comes from your signature. Order the first print of your edition (for example, 1 of 15) through your website as a regular order that ships to you at cost. This allows you to sign it, photograph it for marketing content, and then list it for sale at your full limited edition price. Subsequent editions work the same way—when someone orders through your website, the print ships to you first at cost, you sign it, then ship it to the buyer. You’re still getting the same profit margin; you’re just adding the signing step. Alternatively, you can order prints to yourself in advance if you want to have inventory for in-person events, but for online sales, having them ship to you first for signing before forwarding to buyers is the standard approach. The cost to you remains the same whether you pre-order inventory or fulfill on-demand through your website.
