What different print media types should I offer in my art business?

You should offer at least five main media types: paper prints, canvas, metal, acrylic, and wood. Don’t assume you know what your customers want—you’re not smarter than your buyers. Even if you personally prefer one medium, collectors have different tastes and different spaces with different requirements. Some may have seen a wood print at a friend’s house and specifically want that. If you can’t show and explain the differences between these media types, you can’t position yourself as the subject matter expert. You don’t necessarily need to actively promote all five equally, but you should have samples of each so you can educate potential buyers and accommodate their preferences. Let your customers vote with their wallets rather than limiting their choices based on your assumptions.
