How should I think about pricing strategy for different venues like street fairs versus high-end art shows?

Your pricing must adapt to the venue and audience. At a street festival, you might sell prints for fifty to a few hundred dollars. But at an upscale art fair where galleries show work starting at fifteen thousand dollars, having pieces priced at two thousand will actually hurt you – affluent buyers may perceive low prices as indicating low quality. However, this creates a challenge: if you have a website with lower-priced work, wealthy buyers will find it and expect those prices. You need a clear strategy for managing this, either by temporarily removing certain pieces from your online store during high-end events, or by having a separate premium collection with different pricing entirely.
