What's the restaurant analogy and how does it apply to my art business?

The restaurant analogy is this: you find your favorite type of food by trying many different restaurants, not by eating at the same place over and over. Similarly, you find your best-selling subject matter by testing many different styles and subjects, not by stubbornly sticking to one direction. You’ll never know what truly resonates until you try multiple ‘restaurants.’ And just like you keep trying new restaurants even after finding a favorite, you should keep experimenting with new art directions throughout your entire career — there’s always a chance to find something even better.
