What's the best way to choose what subject matter or style to create as an artist?

Instead of starting with what inspires you or what you enjoy creating, flip the process: start with demand and work backwards. Do homework before you create. Research what people are actually buying, what’s selling in the market, and then create that. Most artists create first and hope it sells, but you’ll have far better results if you identify demand first, then use your creative skills to fulfill that demand. This approach is counterintuitive but extremely effective.
