No, you don’t need a niche to start. What you need is something that will actually sell. The idea that you must define a narrow niche with 50-100 images before launching is completely wrong. You’re much better off starting with one piece, validating whether it sells, and iterating from there. Most artists’ first niche doesn’t work anyway, or works only on a small level. Focus on finding what resonates with buyers, not on pre-defining a niche.
